Erwtensoep, the traditional Dutch pea soup

Ingredients. To prepare this typical Dutch dish you need:

  • 350 grams of dried peas.
  • 350 grams of smoked pork loins.
  • 300 grams of patatos.
  • 200 grams of celery
  • 150 grams of ham.
  • 150 grams of green beans.
  • 6 slices of bacon.
  • 4 liters of chicken or meat broth.
  • 3 smoked pork sausages.
  • 2 carrots.
  • 1 leek
  • 1 onion.
  • Vegetable oil (necessary amount).
  • Salt and freshly ground black pepper (to personal taste).

Elaboration. The first thing to do is soak the peas in plenty of water for about 5 hours. Then, put a little oil in a pot and cook the ham for a few minutes.

Next, add the peas, the smoked pork lardons and pour about 3 liters of the broth, either meat or chicken. Let it cook over low heat for approximately 60 minutes.

After this time, add the rest of the broth and also add the vegetables, that is, the potatoes (which have to be cut into cubes), the carrots (ditto above), the celery, the green beans, the leek and the onion ( all these cut in brunoise). Let cook for 30 minutes.

With the bacon strips, what you have to do is wrap them in aluminum foil and cook them for 20 minutes in an oven that must be preheated to 180°C.

With the sausages, in turn, you have to cut them into slices and sauté them in a pan for a couple of minutes.

Once the bacon and sausages are cooked and the contents of the pot are ready, it’s just a matter of bringing everything together and seasoning with salt and freshly ground black pepper to personal taste.
